When I think back to some of my favourite foods, they are usually prepared for a specific holiday meal. For most people,\u00a0holiday food is associated with happy memories and even a small scent can trigger thoughts\u00a0of loved ones enjoying time together. It’s no wonder that my husband’s favourite meal of all-time is Turkey dinner as that’s what his mother prepared for Thanksgiving, Easter and Christmas. Personally, I’m a big fan of my mom’s chicken soup and liver pate. Now that the holidays are over, it got me thinking how it’s a shame that we don’t eat some of the food that we prepare for our holiday meals year round. But why can’t we?<\/p>\n

That’s why I’m sharing one of my favourite holiday recipes with you today and encouraging you to eat it year-round! Hanukkah was just last month and one of my favourite dishes from this holiday is latkes (potato pancakes for those of you not familiar with the term).<\/p>\n

\"Hanukkah<\/p>\n

Since Hanukkah is a celebration of the miracle of the oil lasting for 8 days, we tend to eat lots of food that’s fried in oil. It might not be the best for our wasitelines, but it’s delicious. There’s a reason potato latkes are a crowd pleaser at most restaurants that serve them! Of course, there are healthy varations including substituting sweet potatoes or zucchini instead of white potatoes and baking the latkes instead of frying them. \u00a0Here are two easy recipes for both fried and baked latkes (which also make for some great looking appetizers). My son loves helping me make these and I even cooked some in his class last month. \u00a0I hope you will enjoy eating these latkes year round with your family, friends and loved ones! Fried Latkes<\/h3>\n

Serving size: 6 – 8 people<\/p>\n

Ingredients: 4 potatoes, 1 small onion, 1 egg, 1\/2 cup flour, salt & paprika for flavour<\/p>\n

Instructions:<\/p>\n

    \n
  1. Peal and grate 4 potatoes and onion in a mixing bowl. mix in egg, flour and seasoning.<\/li>\n
  2. Place the pan over medium heat. Add 1\/2 cup of canola oil.<\/li>\n
  3. Using a spoon, scoop out the mixture in the pan and pat the mixture flat.<\/li>\n
  4. Once the bottom side turns crispy (i.e. light brown), turn it over and cook the other side.<\/li>\n
  5. Remove from pan once both sides are light brown and crispy.<\/li>\n
  6. Serve with\u00a0Gay Lea Sour Cream<\/a><\/strong> and Apple Sauce<\/li>\n<\/ol>\n

    Bakes Latkes<\/h3>\n

    Serving size: 6 – 8 people<\/p>\n

    Ingredients: 4 potatoes, 1 small onion, 1 egg, salt & paprika for flavour<\/p>\n

    Instructions:<\/p>\n

    1. Set oven to 375 degrees.<\/li>\n
    2. Peal and grate 4 potatoes and onion in a mixing bowl. mix in egg, and seasoning.<\/li>\n
    3. Coat muffin tin with spray butter.<\/li>\n
    4. Using a spoon, scoop out the mixture in each tin\u00a0and pat the mixture flat. Don’t fill the tins all the way to the top.<\/li>\n
    5. Bake for 40 – 45 minutes, until top of latkes are light brown and crispy.<\/li>\n
    6. Serve with\u00a0Gay Lea Sour Cream<\/a><\/strong> and Apple Sauce<\/li>\n<\/ol>\n
