A few weeks before my son was born, I hosted a cooking class at my house lead by Agnes.\u00a0I gathered\u00a0seven of my friends and we learned how make a delicious Thai Green Curry and Thai rice noodle salad.\u00a0 Agnes brought the wine, ingredients, some cooking tools and off we went.\u00a0 We had an awesome girls night chatting, drinking and cooking.\u00a0 The food tasted amazing, and we couldn’t believe how easy it was.\u00a0Whether you’re looking for a personal chef, catering, cooking class for your girlfriends or KIDS, I would highly recommend Agnes.\u00a0 She’s so much fun to work with and the food is amazing!<\/p>\n With sunny skies finally here, Agnes is sharing one of her favourite recipe’s\u00a0that has\u00a0a summer flair.\u00a0 Bon Appetite!<\/p>\n ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~<\/p>\n Coconut Peach Chicken with Peach salsa<\/p>\n <\/a><\/p>\n Ingredients<\/strong><\/span><\/p>\n 1\/3 cups breadcrumbs<\/p>\n 1\/3 cup sweetened coconut<\/p>\n 1 tbs minced coriander<\/p>\n salt and pepper<\/p>\n 3 tbs apricot jam<\/p>\n cooking spray<\/p>\n 1 lb chicken breasts<\/p>\n Peach salsa<\/strong><\/p>\n 2 ripe peaches (can substitute pineapple or papaya)<\/p>\n 1\/2 cup diced red pepper<\/p>\n chopped chives<\/p>\n 1 clove garlic<\/p>\n 1 chopped hot pepper optional<\/p>\n 3 tbs chopped corriander<\/p>\n 2 tbs lime juice<\/p>\n salt and pepper<\/p>\n Cooking Instructions<\/strong><\/span><\/p>\n Salsa:<\/strong> Combine all ingredients in a bowl<\/p>\n Chicken:<\/strong><\/p>\n Combine breadcrumbs, coconut, coriander, salt, pepper in a bowl.<\/p>\n Brush chicken with jam and dredge in breadcrumb mixture. place on parchment paper and spray with cooking spray. Bake at 425F for 20 minutes until chicken is no longer pink inside and golden on outside.<\/p>\n Serve with peach chutney.
