Mothers Day is this Sunday, May 11th. If you don’t have plans and you are looking for some brunch ideas or inspiration, I have two easy recipes to share along with some colourful, durable outdoor (weather permitting) servewear from President Choice.
French Toast
Instead of using regular sliced bread or even Challa bread, use a baguette. Smaller serving size makes it perfect for a big family brunch. In a bowl, whip together eggs, milk, sugar and cinnamon. Dip the baguette in the mix and cook over low – medium heat. Serve over PC’s Black Label raspberry syrup and top with your favourite fruit and whip cream.
Eggs Benedict
To make Eggs Benedict, heat water in a pot and let simmer. Crack eggs into small cups and pour each one individually into the pot. TIP: make sure not to stir the water and don’t touch the eggs once poured into the pot. Let cook for approximately 10 minutes. Before putting the poached egg on your english muffin, place on a heel of bread to absorb the extra moisture (great tip from PC Choice Chef Andrea Buckett). Add spinach to an english muffin and place the poached egg on top. Top off with home-made hollandaise sauce (mix eggs and lemon juice together in a bowl in a pan over hot heat). You can also offer smoked salmon as an additional topping.
