Home made Banana Ice Cream

Melissa Jacks, the nutritionist that provides you with these great weekly recipes on my blog, made this Banana Ice Cream recipe last week out of necessity.  Her son was home sick with a high-fever and he really wasn’t interested in eating anything… except Ice-Cream. So Melissa came up with a quick and easy recipe to get some protein in her son while providing him with his craving.  Make sure to keep this recipe in your back pocket as  you know once your kids try it, they’ll be asking for it again (and again).

RECIPE

Prep Time: 15 Minutes     Serves: 3 servings

Ingredients

  • 1/3 cup slivered almonds
  • 1 cup cottage cheese (low fat, 1%)
  • cinnamon and vanilla to taste
  • 1 large ripe banana, frozen
  • Sweetener (i.e. Stevia) to taste (optional)

Instructions

1. Blend cottage cheese, almonds, cinnamon and vanilla in a food processor until smooth. Blend in frozen banana.

2. Transfer into a dish. Place in the freezer for 15-20 minutes, or until hardened. Serve immediately.

Tips

Try This! For a nut free version, use ¼ cup coconut butter instead of the slivered almonds.

    Gosh, I think I luv you! I know it’s winter, but lately I’ve been craving homemade ice cream, something we always had when we visited gramma and grampa in the winter time… right after we went out on the dune buggy and snow machines… then we’d warm up with gram’s apple cider!

    Mmm this sounds great! I never think to use cottage cheese in smoothies or anything like this for an added protein boost

    We’ve made something similar in the past, but have never used cottage cheese with it so I like how it’s a healthy spin! The use of coconut butter would also be pretty dreamy!
