It’s back-to-school…. the time when most parents rejoice and kids sulk. I’m sort of in the middle. I enjoy the routine because it gives me more time to train and work, but I hate the morning rush.
Speaking of being rushed… I find it’s not always easy to prepare balanced lunches and snacks for the boys. When I do, I find that they never eat their fruits or vegetables at school. I think it’s a combination of being rushed to eat and the fact that they just don’t feel like it during the day.
So, what I do instead is provide them healthy snacks after school (mostly fruit) and give them vegetables for dinner. It’s all about balance, right?
While I usually give them fruits as-is, once in a while, I like to switch things up and dress up their fruit. That includes adding some additional protein using siggi’s Icelandic skyr yogurt. It’s a great energy boost for the post school slump. siggi’s Skyr yogurt (now available in Canada), is a creamy yogurt, high in protein with not a lot of sugar and made with 100 percent natural ingredients. How’s that for a parenting win?
Here are two of my favourite siggi’s kid-friendly recipes that are perfect for an after-school snack.
ghosts and mummies frozen treats
Ingredients
1 cup siggi’s 0% vanilla Skyr
1/4 cup whole milk or cream
6 bananas, halved
12 frozen treat sticks
mini chocolate chips
Direction
Insert a frozen treat stick in each half of the bananas then place in the freezer for about an hour. This will make the dipping into the yogurt much easier.
Once frozen, whisk together the yogurt and milk in a bowl.
Dip the frozen bananas into the yogurt, making sure it’s well coated.
To create the ghosts, use mini chocolate chips or melted chocolate to create eyes and/or mouth.
To make the mummies, place the treats back into the freezer for about an hour. Then drizzle with more yogurt then decorate with eyes. Keep the treats in the freezer until ready to serve and enjoy!
watermelon pizza
Ingredients
1 round 1-inch thick slice of watermelon
1 cup siggi’s 0% vanilla Skyr
1 cup assorted fresh berries
4 tbsp toasted unsweetened coconut flakes (optional)
2-3 sprigs fresh mint
Preparation
Spread the skyr in an even layer over the watermelon slice. Top with berries. Sprinkle coconut over the top and scatter the mint leaves. Cut into six slices and enjoy immediately.
