While I’ve been spending a lot of time on my health and wellness the past 6 months, I’m more laid back when it comes to my kids. Yes I feed them well during their main meals, but they definitely enjoy their share of snacks and treats throughout the day. I chalk it up to “pick your battles” and the fact that I grew up eating the same things and turned out okay. I know, I’m just justifying it to myself, but either way, it is what it is!
When Alexandria*, my long-time hairdresser that comes to my house to do my hair (amazing, I know) spoke to me about collaborating together and showcasing some easy, delicious and healthy meals for the family, I jumped right on it. It’s something that while I don’t always practice in reality, it’s something that I do want to be better at. Since my boys all have a sweet tooth, I knew that it would be best to give them a healthier alternative that is packed with proteins.
Which is why I was excited that Alexandria suggested that we make her black bean chocolate brownies. It’s perfect for a snack (for school or after) to help them keep their energy levels strong throughout the day. Other benefits of consuming this brownie include magnesium, essential fatty acids, antioxidants, and blood sugar balancing.

Ingredients:
– 398 ml can of black beans (rinsed and drained)
– 2 o-mega 3 eggs
– 1 ripe avocado
– 1 Tsp organic cacao powder
– 1/2 tsp aluminum free baking powder
– 1 tsp pure vanilla extract
– 1 tbsp melted coconut oil
– 1/4 tsp pink Himalayan salt
– 1 tsp cinnamon
– 1/2 cup dark chocolate chips
Direction:
- Pre-heat oven to 350 degrees
- Place all ingredients (except the chocolate chips) in a blender and blend until smooth.
- Pour batter into a round baking sheet
- Bake for approximately 20 – 30 minutes (baking times vary depending on oven).
- Remove from oven and while still hot, add chocolate chips (or other garnish like coconut bits) to the top of the brownie.
- Let cool and enjoy! (Alexandria prefers to enjoy her brownies the next day after placing them in the fridge overnight.)
