In case you haven’t heard, I’ve teamed up with Melissa Jacks, a parent and nutritionist from Toronto who knows all about the importance of feeding your family healthy and nutritious food. Melissa has devoted the past 10 years of her career to motivating and educating individuals to understand the fundamentals of nutrition. In addition to establishing a consulting practice to share her knowledge with families and organizations, she has recently launched an online weight loss program and cookbook. Melissa’s background in kinesiology, psychology and public health have resulted in a passion and desire to assist those who are looking for healthy changes. Weekly, we’re going to be sharing a healthy recipe that can enjoyed with your family. In additional we’ll share some tips, tricks and substitutes, taking diets and allergies into consideration.
Since winter is here to stay, I’m sure we could all use some comfort food. My idea of that is a nice bowl of chicken noodle soup. I’ve always said that the one reason I could never become vegetarian is because of my love for chicken soup. This version of chicken soup is delicious, packed with nutrients, and ready in under 30 minutes. All you need is a roasted chicken, some vegetables, noodles and broth. The beauty is that this is also a complete meal.
RECIPE
Prep Time: 10 Minutes Cook Time: 20 Minutes Ready in: 30 Minutes Serves: 6 servings
Ingredients
- 2 tbsp. olive oil
- 3 cloves garlic, chopped
- 2 medium onions, sliced
- 6 large carrots, sliced
- 1 bunch celery (8 stalks), sliced
- 10 c low-sodium chicken broth
- 3 cups roasted chicken , shredded
- 2 cup egg noodles, dry
- Salt and black pepper to taste
Instructions
1. In a large nonstick skillet, heat oil and garlic over medium-high heat. Cook onions, stirring occasionally until tender (about 5 minutes). Add carrots and celery and cook for another 5 minutes.
2. In a large pot over medium heat, combine broth, vegetables and shredded chicken. Bring to a boil, reduce heat and simmer for 15 minutes. Add egg noodles and simmer for another 5 minutes until noodles are tender. Season with black pepper.
Tips & Tricks
*For those looking for gluten free alternatives, substitute the egg noodles for rice noodles, or any other gluten free varieties.
*Can replace noodles with chick peas for a lower glycemic option.
*Suggested chicken broth brands: Imagine Organic Chicken Broth, Organics Chicken Broth or Campbells Organic Chicken Broth. Use your own broth if you wish!
