Agnes is a certified chef and owner of Gourmet Everyday Catering, with over 10 years of catering experience. A few weeks before my son was born, I hosted a cooking class at my house lead by Agnes. I gathered seven of my friends and we learned how make a delicious Thai Green Curry and Thai rice noodle salad. Agnes brought the wine, ingredients, some cooking tools and off we went. We had an awesome girls night chatting, drinking and cooking. The food tasted amazing, and we couldn’t believe how easy it was. Coconut Peach Chicken with Peach salsa
Ingredients
1/3 cups breadcrumbs
1/3 cup sweetened coconut
1 tbs minced coriander
salt and pepper
3 tbs apricot jam
cooking spray
1 lb chicken breasts
Peach salsa
2 ripe peaches (can substitute pineapple or papaya)
1/2 cup diced red pepper
chopped chives
1 clove garlic
1 chopped hot pepper optional
3 tbs chopped corriander
2 tbs lime juice
salt and pepper
Cooking Instructions
Salsa: Combine all ingredients in a bowl
Chicken:
Combine breadcrumbs, coconut, coriander, salt, pepper in a bowl.
Brush chicken with jam and dredge in breadcrumb mixture. place on parchment paper and spray with cooking spray. Bake at 425F for 20 minutes until chicken is no longer pink inside and golden on outside.
Serve with peach chutney. Enjoy!

Ok I will admit, I’ve never eaten chicken with fruit of any kind, I’ve shied away from it. But if I were to try it, I think peaches or papaya sounds the best. The thing I like best about this recipe is the coconut. I love coconut & think I could handle that flavor with the peaches.
