Breakfast meal ideas for the cottage

My friend and I were recently discussing how much weight we gain over the summer months. Not for a lack trying, but because we eat differently in the summer, specifically at the COTTAGE! Yes, cottage season is upon us and that means lots of barbeques, snacks and drinking. Luckily, all of the outdoor activities we do often cancel out all the food that goes in. Nonetheless, food is associated with summer and the cottage. It’s no wonder that the first thing our guests ask us whenever we invite them over is what food can they bring.

It’s our 13th year hosting in our cottage and while lunch and dinner is usually the typical barbeque meal consisting of hot dogs, hamburgers, chicken and some corn (or the mixture of all), I like to mix things up for breakfast. It’s become my speciality. The best part is that it’s quick, easy, filling and delicious! It’s great whether you’re hosting 20 people or just feeding your hungry family. The best part is that all you need is 7 ingredients which also makes it very affordable.

Easy Cottage Breakfast

Ingredients

Red Onion, pack of frozen diced hash browns, eggs, toast, Gay Lea Butter, baked beans (tomato sauce or maple syrup flavour), pancake mix.

Instructions

Begin with the hash browns because they take the longest to cook (approximately 45 minutes). Dice up a red onion into small size pieces and put in an oiled pan. I personally like to cook it in a cast iron pan, but it’s not necessary.

While the hash browns are cooking, begin making the pancakes. I like to make some with chocolate chips, some with blue berries, some with sprinkles and some plain ones (to appease different tastes and ages). Turn on the oven to a low temperature (250 degrees) and place the cooked pancakes on a cookie sheet in the oven to keep warm.

Next heat up the beans and begin making the eggs. I rotate between scrambled eggs and fried eggs. If you’re making a large batch of fried eggs, add each cooked fried egg to the cookie sheet in the oven to keep them warm.

If you have a kitchen helper, get them to start toasting the bread a few minutes before you finish cooking the eggs. As soon as the toast is ready, spread Gay Lea Spreadable butter on it. You can find it in regular, light and Cinnamon Brown Sugar flavours.

Serve with coffee, orange juice and a side of fresh fruit.
