I don’t know about you, but mornings are usually the most stressful part of my day. It doesn’t help that on days my husband is out of town for work, my oldest sleeps in till about 8 AM (about 25 minutes before we have to leave) and I have to walk my boys to two different drop-offs. Between trying to teach them to be independent (like getting dressed and eating by themselves) and getting out the door in time, I’m a mess and a stress case by the time we leave the house.
Not to mention, I’m focusing on living a healthy life style for myself and my family. That means, I can’t just give them something that is quick and easy but full of sugar. I really need to choose wisely to provide them with proper nourishment for a day of learning and play. This is why I’ve put together some breakfast ideas for others who find themselves in the same situation. Rushed for time but are concerned about providing proper nourishment for their kids. Here are my 5 breakfast ideas that can be prepared in less than 20 minutes and are kid-approved!
Steel Cut Oats Cereal Two Ways
Hot Steel Cut Oats
In our house, we call them “Granny’s cereal” because it was my husband’s mom who introduced my kids to this delicious meal. Steel Cut Oats are full of fibre and are a source of protein. To make this meal, boil water, add the steel cut oats, reduce heat to medium and simmer for 20 minutes. Let sit for a few minutes and then add milk, cinnamon and maple syrup. Top it up with your kid’s favourite fruits.
Directions: Prepare Steel Cut Oats according to package instructions (typically, for each cup of oats, you need 2 cups of water). Add 1/2 cup of milk or dairy alternative, sprinkle a teaspoon of cinnamon and pour about 1 – 2 tablespoons of maple syrup based on your preference.
Fruit toppings can include apples, bananas, strawberries, blackberries or blueberries. You can also mix it up by adding Almond Butter or shaved coconut.
If you’re REALLY pressed for time, try instant steel cut oats that can be prepared in less than two minutes but is just as delicious and healthy.
Steel Cut Oats on-the-go
Also, if you’re like me, you probably don’t have time to eat breakfast. After all, you’re too busy feeding your kids, getting them dressed and so on. That’s why I love this Steel Cut Oats on the go option. Put it in a mason jar and add your favourite fruits and eat it after drop offs, on the train or once you get to the office. Just because you don’t have time to eat at home in the morning, it doesn’t mean you can’t eat healthy.
Eggs Three Ways
I’m lucky that my boys love eggs. However, they all like to eat them cooked in different styles. My oldest prefers them cooked easy-over, my middle son likes scrambled and my youngest likes to eat them hard boiled. Thankfully, they all take 10 minutes or less to prepare.
Eggs are a form of complete protein which not only helps kids grow bigger and stronger but helps with the development of the brain. They are also an excellent source of vitamin D which is important for bone health. Add the egg to a protein-rich slice of bread, add some vegetables like cucumbers or avocado spread and serve with a side of beans and fruits. They’ll be full and energized for a busy day ahead.

First off, I love that first day of school picture! My go to quick breakfast are my pre-made Omelette muffins – they’re packed with protein & my kids love them too.

Mornings are crazy! I yell a little too much in the mornings. These are some great “start your day options.” I don’t like my kids starting the day with sugar cereal and Oatmeal is my go-to as well!

I make buttermilk waffles on the weekends and then freeze the left overs. The kids love to just pop them in the toaster and eat them. Easy enough that they can make breakfast themselves….that’s a plus.
