Baked Salmon Fish Sticks Recipe

My four year old son Kyle loves to discuss how he can grow big and strong so he can be just like his dad.  We often tell him that it comes down to sleep, exercise and eating well.  The conversation leads to a full-on discussion of what constitutes healthy food.  We let him know that while chocolate may be good for the soul, it’s the vegetables that will make him healthy and strong. We often emphasize that some of the best food he can eat includes fish. However, words don’t speak louder than action and we all know that getting kids to eat fish is often easier said than done. For my kids, there are only two ways they’ll eat fish. If I ever alter the recipe of the fish type, they won’t touch it.  But honestly, I’m just thankful they’re willing to eat it one way at least.

Here’s a great fish sticks recipe from Melissa Jacks that is sure to be a hit with your little ones. Not only does it not look like fish (yey, parenting win!), but it’s easy to make too.

salmon fish sticks

RECIPE

Prep Time: 10 Minutes     Cook Time: 20 Minutes     Ready in: 30 Minutes     Serves: 4 servings

Ingredients

  • 1 pound fresh salmon, boneless, skinless, cut into strips
  • 1/3 cup seasoned bread crumbs
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper
  • 1 egg or 2 whites

Instructions

1. Preheat oven to 400° F.
2. Prepare salmon into strips . Set aside.
3. Mix bread crumbs and spices in a dish that has sides to prevent spilling.
4. In another bowl, beat eggs. Dip salmon strips into egg mixture and coat with crumb mixture. Repeat until all strips are coated. Add more bread crumbs if needed.
5. Place the coated strips on a parchment lined or greased baking pan and bake for 20-25 minutes or until cooked through. Flip strips over halfway. Fish should flake easily with a fork when ready.

Tips & Tricks

* For a gluten free option, use gluten free bread crumbs or almond flour.

    It’s great that they look like fish sticks, my kids are weird they won’t eat any fish at all, only if it looks like a fish stick, so this is a great recipe!!
